Easy Vanilla Cookies with Starburst Candy Corn

Sometimes, it’s nice to surprise my girls (and the husband) with a little weekend treat. They had a movie afternoon while the littlest was asleep and had no idea what I was up to. I thought it would be fun to whip up some Starburst inspired sugar-esque cookies.

They were a huge hit and of course, in true to me form, very, very easy to make.

Easy Vanilla Cookies from Cake Mix with Starburst Candy Corn

I used a classic white cake mix as my base, and instead of using the ingredients to make it a cake, I added

  • 1/3 cup oil (you could use apple sauce)
  • 2 eggs
  • 1 box of classic white cake mix
I mixed everything together by hand and had my batter in about 3 minutes. Since I wanted them to look like Starbursts, I added a little red food coloring to give them a pinkish-orangish color that went with all of the Starburst candy corns. To tie it all in even more, I added some pink, red, yellow and red+ yellow (to make orange) sprinkles to each of the cookies, so they would all have a color-theme. I’m crafty like that.

Those bad boys went in a 375 degree preheated oven for only 6-8 minutes (6 was best for us). While they were cooking, I sorted the Starburst candy corns by color, they they would match their respective sprinkles.

Right when the cookies came out of the oven, they were still very soft. I quickly pressed one Starburst candy corn into each of the cookies and allowed them to cool on an cooling rack (which kept the candy corn pressed into the middle).

Then super sweet candy corn was just the the right pop of fruity flavor to go with the not nearly as sweet vanilla flavored cookies. And, of course, they were a nice movie treat for the girls and Mr. Serious. (Yes, I might have had one, or two or three as well).

Ingredients:

  • 1/3 cup oil (you could use apple sauce)
  • 2 eggs
  • 1 box of classic white cake mix
  • sprinkles
  • food coloring
  • Starburst Candy Corns
Directions:
  • Preheat oven to 375F.
  • Mix oil, eggs and cake mix together by hand
  • Add food coloring if desired
  • Roll batter into 1″ balls and place on cookie sheet
  • Sprinkle with sugar sprinkles if desired
  • Bake for about 6 minutes
  • Remove from oven and press Candy Corns into center while cookies are warm
  • Place on cooling rack
  • Enjoy

I was inspired to make these cookies by a series of Tori Spelling’s Tasty Tips for Halloween Entertaining. The cupcakes and Candy Corn Treats were definitely my favorites of her edible creations and the Spider’s web would look great on a doorway for Halloween.

    1. It makes it a million times easier..and doesn’t make a million cookies (which could be good or bad, depending on the occasion). The box is a perfect 2 dozen:)

    1. Fabulous! Yes, I think this is the first year they’ve made them. They are super sweet and fruity, but so much better than the regular ones!

    1. Most definitely. The girls usually like to cook with me, but I wanted to surprise them this time. We’ve totally done a very similar recipe together, too because it’s so easy and quick for them that they don’t lose interest.

    1. That’s totally what I was thinking (joint birthday party in a couple weeks here!)…or maybe I’ll make them for us to munch on during the party!

    1. I wouldn’t! But, having said that, these are nothing like the usual candy corns. These are fruity and delicious (and you can only eat a couple). The regular ones don’t have a flavor, and are sort of just super sugary!

  7. I always see people making cookies with box cake mix, but I’ve always been too scared to try it! Maybe rethinking this!

    1. I’m definitely not a cake/cookie expert. They aren’t crispy like some cookies, but aren’t mushy, either. I’d recommend giving it a try:)
