Lemon thyme chicken

Lemon-Thyme Chicken Breasts

Lemon-Thyme Chicken Breasts
Cook Time 45 minutes
Total Time 45 minutes

Ingredients

  • 3 12-oz bone-in, skin-on chicken breasts
  • 3 Tbsp chopped fresh thyme
  • 2 tsp grated lemon rind
  • 2 Tbsp olive oil
  • 1 Tbsp fresh lemon juice
  • 1 tsp salt
  • 1 tsp pepper
  • 4 cloves garlic, minced

Instructions

  1. Preheat oven to 400°F.
  2. Run fingers under skin of chicken breasts to loosen skin from flesh.
  3. Combine remaining ingredients; rub mixture under chicken skin.
  4. Place chicken on a rack in a broiler pan rubbed with oil.
  5. Bake 45 minutes.
  6. Increase oven temperature to broil.
  7. Broil chicken 3 minutes or until skin is crisp; cut into serving-size pieces.
