I’ve tried coconut oil before and I didn’t care for it. The taste was seriously overpowering and it was all I could taste in some cupcakes I made.
But, I tried it again. This time I tried Kelapo’s Virgin Coconut Oil. Now, maybe it was the recipe I used, or maybe the oil, but it didn’t taste coconutty as the first taste (hubby couldn’t even tell I used it. I used it to make whole wheat pumpkin chocolate chip and marshmallow muffins and they were a huge HIT. Mr. Serious took them to work and they disappeared! They didn’t even make it to the freezer in our house, either. I promise you wouldn’t know they were whole wheat, either. The girls devoured them.

Whole-wheat pumpkin chocolate chip marshmallow muffins (modified from a friend who bakes way more than I do)!
- 3 cups sugar
- 1 cup coconut oil (you could probably half this with applesauce, too).
- 4 eggs
- 3/4 cup water
- 1 can pumpkin
- 1 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2 teaspoons baking soda
- 3 1/2 cups whole wheat flour
- 1 c. chocolate chips
- 1 c. miniature marshmallows
Mix all ingredients together (or do the dry and wet separate then mix together). Pour into greased loaf pans and bake one hour at 350, or do muffins for about 20-25 minutes.. Yields about 40 muffins.
As a crazy side note, did you know that coconut oil is great for curing diaper rash and other skin maladies? Our youngest had some dry skin on her cheek (eczema) and I put a little on it, and it looked better almost immediately.
