Quick and easy gluten-free baked chicken with salad

The other day I had a recipe pulled out and all ready to cook. Then, I had a fussy toddler and a fussy baby and I knew that planned dinner wasn’t going to happen. But we still had to eat.

I saw the naturally gluten free, non-gmo and all natural spice blends, EVOO, aged balsamic vinegar that I was sent to try from Home Appetit sitting on my counter and my wheels started turning. Since all of the spice blends from Home Appetit are naturally gluten free, I didn’t have to worry about being able to eat it. Going into changing my diet for breastfeeding, I had no idea that gluten was hidden in so many places; for example spices and even soy sauce!

I had my a-ha dinner moment, asked the girls if they wanted to help and dinner was in the oven in minutes.

The spice blends? Smell absolutely amazing. And I honestly didn’t care what I put them on, I just knew I wanted them with dinner.

First, I brushed the chicken breasts with a little of the estate-grown extra virgin olive oil. I poured some of the Mediterranean Rosemary & Citrus Spice Blend into my hand.

Then I asked my 5 year old to come help sprinkle some right onto the chicken.  Thankfully, she was in a super helpful mood. That chicken got popped into a 350-degree preheated oven and cooked for about 25 minutes.

While we were waiting, we chopped up some lettuce and gave it a spin. Nobody likes wet lettuce and wet lettuce and oil don’t mix! I whisked together 2 tablespoons of EVOO and 2 tablespoons of balsamic vinegar.

That was poured over our recently dried lettuce and lightly tossed. I also served it with guacamole because the girls really like it and asked for it and because I love how they say guacamole.

I found that I had a little extra dressing left over in the bowl. Because the salad was so good, I saved the dressing in a little container. The next day, I cleaned and dried some more lettuce and put it into that container, put the lid on it and gave it a shake. It was a super easy way to eat a healthy salad with great flavor and I probably used a teaspoon of dressing total!

Ingredients

  • Chicken
  • Mediterranean Rosemary & Citrus Spice Blend from Home Appetit
  • EVOO
  • Balsamic Vinegar
  • Lettuce

Instructions

  • Lightly brush chicken breast with EVOO
  • Generously sprinkle Mediterranean Rosemary & Citrus Spice Blend over chicken
  • Bake at 350 for ~25 minutes until cooked through
  • Mix equal parts EVOO and Balsamic Vinegar and whisk
  • Pour over clean + dry lettuce and toss

    That looks delicious and I don’t need to be gluten free but I do try to steer my way to choosing gf foods when I can.. I am like you.. who knew .. I am surprised at how many places it is hidden also. Never would have thought.

    We’ve started using EVOO in tons of what we cook, it’s so much healthier than cooking in other oils. I’ve never heard of this brand, I’ll have to give them a look for.

      My youngest was super colicky. I had previously cut dairy and it made some improvements, but she was still having tummy issues. I cut the gluten and she was a different baby. I haven’t had her tested yet, but I suspect she has some intolerances (I’m lactose intolerant and have a bad tummy). The ped said we need to wait to do official testing.
