Lemon-Thyme Chicken Breasts

Ingredients

  • 3 12-oz bone-in, skin-on chicken breasts
  • 3 Tbsp chopped fresh thyme
  • 2 tsp grated lemon rind
  • 2 Tbsp olive oil
  • 1 Tbsp fresh lemon juice
  • 1 tsp salt
  • 1 tsp pepper
  • 4 cloves garlic minced

Instructions

  • Preheat oven to 400°F.
  • Run fingers under skin of chicken breasts to loosen skin from flesh.
  • Combine remaining ingredients; rub mixture under chicken skin.
  • Place chicken on a rack in a broiler pan rubbed with oil.
  • Bake 45 minutes.
  • Increase oven temperature to broil.
  • Broil chicken 3 minutes or until skin is crisp; cut into serving-size pieces.
